Blackcurrant leaf juice

Blackcurrant leaf juice is a slightly less sweet fruit juice with a nice tangy flavor.

Ingredients:

  • 9 cups (around 2 liters) of blackcurrant leaves
  • 3 thinly sliced lemons
  • 9 cups (around 2 liters) water
  • 9 cups (around 2 liters) sugar
  • 2 ounces (around 60 g) citric acid

Instructions:

- Put blackcurrant leaves and lemon in a mixing bowl that you can fit in your refrigerator.

- Bring the water to a boil and add sugar and citric acid.

- Pour the mix over the blackcurrant leaves and lemon.

- Cover with plastic wrap and keep chilled for five days.

- Pour the blackcurrant leaf juice through a sieve and put it in bottles or jars.

The blackcurrant leaf juice stays fresh for a while in the refrigerator, but I usually freeze some of it.
Try freezing the juice in jars that you can put in the dishwasher later.
